With food, you can NEVER be too clean. I worked in a "greasy spoon" type eatery in high school but even though it looked like a cheap place, it was kept spotless. We walked on wooden slatted boards to reduce foot fatigue and every night, someone, quite often me, would take it in back, use water straight out of the water heater and this really strong s\green soap and in the morning, they would be white.
He had a partner who ran another shop like it that was the exact opposite. I wouldn't eat anything but a wrapped candy bar and bottled Coke in there. Thankfully, I didn't have to go over there too often.
Sal, I've been in O.R's that weren't that nice and clean. What's next, a correspondence course on surgery? lol. My brother -in-law's friend had a franchise that did his pizzas over wood. They were tasty. Ovens were huge. Had to take a big plate glass window out of the front of one of the stores to get that monster in the kitchen. Are you familiar with those?

Yes, I have family that have wood burning ovens, the pizzas have a very distinctive flavor, very good in my opinion but, those ovens require a very experience person to run them properly.

I worked in a bakery during High School that was the same way.... the owner and manager were sticklers for cleanliness. Every night we would scrub the place from the floor to the ceiling. What looked old and dilapidated from the outside was spotless inside.
Sal- I wanted to swing by when I was up in Malta last month on business, but I couldn't justify a 6hr round trip. If I'm up there over a weekend next time, I'm in, and I'll bring some friends.
