    Also make sure the bird is thawed completely. a frozen bird is what causes a super sonic rocket launch of oil as soon as the bird hits the oil.

    Yep. Make sure it's thawed and as dry as you can get. I blot mine dry with premium paper towels that don't leave lint or anything behind. If you want to rub it down with some Cajun seasoning, don't be stingy.

    I injected the very 1st one I fried...when I started this thread...and haven't injected any since. The only downfall I see with injecting is that the meat around the injection site is a bit strong and takes away from the actual turkey flavor. Some might prefer injecting, but I'll just fry my birds with nothing more than a dry rub.

    3 1/2 minute per pound at 350*F seems to work very well. Or you can go 3 min per pound at 375*F.
