Beef Enchaladas

    That is easy. My Mom used to make a Lasagna south of the border style with flour tortillas. That was like 25 yrs ago, can't remember what all went in it. I know she used salsa in there instead of regular spaghetti sauce plus all the regular cheese like cheddar and monterey jack, sliced black olives. Not sure of the meat probably ground beef, but it could be any kind of meat with seasons like cumin and cayenne,oregano? What ever you want. I think she used refried beans in some of the layers too. She may have used ricotta cheese mixed with egg to bind it all together like a Italian style lasagna. I'm going to check out some recipies on line to see what they use.
