I'd recommend you find a tuner in your local area and use a system that they are familiar with. There are several good brands out there that can handle anything from N/A to max effort boosted applications. FAST, BS3, and Accel DFI come to mind, but I'd hunt around for a good shop and see what they are using.

Ill recomend the FAST XFI system. once you get into the good stuff, there isnt really any kits avalable. You chose the ecu, choose an intake that is setup for injectors or have one converted ( I converted my Super Vic) but I know of a guy that converted his big block to a dual plane and loves it on his suburban he had a single plane efi intake on it before and it had poor drivability crappy low end compared to the dual plane. theres a lot of ways to go.
there is lots of support for the FAST products out there. ask questions before you buy something.

The more I read and the more questions I ask, I think this is one of the big decision points. If there is no around to tune it, even the best system won’t work for you. A quality tuner in the area is important.

I work on these systems all the time. It's not on the level of building a nuclear reactor but it is a process you'll have to do some reading up on. You will be faced with learing what MAP sensors do, IAC sensors, cam triggers, volumetric efficiency, TPS and so forth. You will have to understand what these sensors do and how they work so you can jump in and tune the software. I can't say there are really any super good books on tuning EFI but if you go to the local Borders they should have a few for you to look through. One that is decent in overall explanation of things is based around the Accel Gen 6 system. I think it's still in print. Another option is to go to the Holley website and download the instructions on the Commander 950 system. Edelbrock may have a download on the tuning instructions for their Pro Flo system, which is where I cut my teeth many moons ago. Their instruction book is very good.
I'm of course biased to F.A.S.T. as we are a dealer. The Big Stuff system, Accel Gen 7, Holley 950 are all good systems as well. If your new to this the Holley may be your best bet as you can get a complete kit for most applications and they do offer base maps for download to at least get you going. Their tech support is good and their engineer Mods the EFI section in ChevyTalk for internet support.
Even though there is a lot of things to learn with EFI, non of it is magic. Most folks can pick it up.
