Gluten Free Man Style
Hey maybe this will become a sticky but I figured we needed a GF thread only
I have been a celiac for 8 years and I am a biologist through MSU Bozeman. I have pretty much hit every issue out there so if you need an idea on what or how to cook it, I can help
My favorite meal
steak, baked potato, cheesy broccoli, cherry coke.

beer- best IMO red bridge
Pizza kinnikinnick crusts, spaghetti sauce, mozzarella cheese, Hormel GF pepperoni
alchohol-all clear ok,
whiskey all bad! it is re filtered through the mash and contains gluten!

just to let you know the majority of resteraunts have a GF menu even the olive garden, outback, johnny carinos, red robin, buffalo wild wings, all you need to do is ask for the GF menu and they will get it for you

I discovered Red Bridge beer a couple of years ago. It seems less inclined to trigger my Cluster Headaches, which has made me wonder about the role of Gluten in CH.

An interesting thing about clear alcohol - I usually only drink Vodka drinks, and its seems pretty hard for pure Vodka to have Gluten. But I read something on the internet that says all those flavored Vodkas(which I happen to like) have the Gluten added to them via the flavoring.

Thanks for posting this, my wife has a gluten allergy which we finally figured out 2 years ago after years and years of being sick. For alcohol (she's not much of a drinker) she sticks to Chopin potato vodka. The whole "living gluten free" thing has taken some time to get use to but she's always coming up with some good recipes and the kids and I are really trying adapt her needs. The biggest thing I found is the food prep, not only how and what you cook, but what you use for pots, pans , utensils, etc.
For bread we usually make out own or she buys UDI brand and they make a pretty decent pizza crust as well. Bisquick also makes a GF pancake mix.
Sweet Baby Ray's BBQ sauces are pretty good! we make a kick ass pulled bbq chicken & onion meal in the crock pot. She also makes a pretty good GF chilli, tacos, nacho's...the list goes on!

AHHHHHH!!!!!!!!! sweet baby rays is sorta Gluten free #1 Modified food starch is a byproduct of wheat or corn, so maybe ok there #2 caramel color is a barley product almost a concentrated gluten, thats why I cant drink any dark colored pop but on a scale of 1-10 im like a 30 i get sick if i touch a piece of bread i get hives and sores

its all a sensitivity thig shes prolly not eating an entire jug of bbq by herself and the FDA standard for GF id 50 ppm

i also have celiac disease on top of being a 31 year diabetic.After about 7 years of always feeling sick, and listening to the doctor tell me that it was a by product of childhood diabetes,i went to some one else. I told my new doctor test me for everything you can,with an average A1C of 6.8 i didn't want to hear is is diabetic related.He came back with possible celiac.I changed my diet and almost a year later I feel 10 years younger and a whole lot better.It has more life changing then my life with diabetes.But,when I do get even a trace of gluten, in about 2 days later it's like having the flu.Feel like crap,body aches,no energy and upset stomach.  But i am getting better!!!!2 years now!!

I must add that although I am very tall (6'8") I have been overweight all my life until the last 6 months. Most of the past 10 years I have always had health complaints. I've taken Prilosec for my stomach since it was invented (Mid 90's). I have completly, scientifically rejeceted the basis and treatment for ciliac UNTIL 2 weeks ago. I have mocked those who said that had it, berated those on gluten free kicks as freaks.
I intentionally lost 30+ lbs starting back in late October, I fought hard for every pound and knew the easiest way was to get rid of most carbs. Most of the carbs I used to consume where wheat flour carbs. I cut them out of my diet, the weight fell off in 3 months (fairly slow and steadily). I felt MUCH better overall, stomach and bowels improved greatly.
The other night I tried an experiment on purpose. I ate a sandwich with a large, white roll at lunch time and more pizza for dinner than I had eaten in half a year. I reacted so terribly that I woke up in the middle of the night to run to the bathroom. My stomach hurt like it has for my entire life and I felt, almost hung over the next morning (although it has also been years since I consumed much alcohol)
Although I have no labratory tests to prove any of this, I do not need them. I can fairly easily tolerate whole grains (but usually do not eat true whole grain wheat as it is not tasty)
Funny that something I mocked has likely affected my whole life. Now, I intentionally live on a very limited, but fairly filling and satisfying diet and am looking to my kids to take a week or two and remove the same bad stuff from their diet.
Good luck to all who will need to modify lifestyles, flours are so pervasive. They are hard to avoid!

yeah i was diagnosed first then my entire family got tested and then finally we discovered that one aunt and one uncle from my fathers side were also celiacs so its a good theing to find out if you have it or not
