Deer...
A Mexican friend of mine invited me over for some deer cooked "our way"... I think they call it "beeria" although I'm certain I have the spelling wrong.
Quick Description:
Deer is cut into 6 sections front and rear shoulders / legs and the rib cage. Put some sort of rub on it let it set (refrigerated) for 2-3 days.
To cook it, they throw all 6 chunks into a enormous pot (10-20 gallon?), put a rag over the meat and steam it for about 4 hours.
Second part is the salsa... had cilantro (lots of it), onions, bean / tomatoes blended together, habanero & jalapeno & pablano & chilli (? I think that's what the 4th one was, might be wrong) peppers (and LOTS of them) and not sure what else. This was pretty runny, not like a chunky salsa you eat with chips. It also was not red... more of an orangish brown. It was MF'ing HOT... just about the upper edge of almost too hot to be able to taste anything.
To eat... take a corn tortilla, throw it on the grill for a minute to crisp it up a little, take some deer meat and throw it on the tortilla, dump some salsa on it, roll it up and eat (kinda like a soft taco).
The deer had absolutely NO gamey taste to it whatsoever, and if you didn't know what it was, you'd have thought it was duck. This stuff was so good.... I don't know how to put it into words without getting banned or having this drug into SP. I ate 9 of these things... so freaking good I just can't stand it.
Kinda funny that we were standing in a mushroom house breezeway (not someplace very conducive to eating, lol) from 8pm-10pm on a Tuesday night eating deer ... but I will drop what I am doing to have more. He said they also do lamb and goat as well (can do anything really) but that deer and goat turn out the best due to the meat having such a low fat content. I'm not sure if all the spanish folk cook deer meat this way but if you get a chance to try it and you like spicy stuff... you will regret not trying it.

I'll have to see if I can get the recipe for the rub / salsa. Honestly... it was probably one of the best meals I've ever eaten... bar none... depsite atmosphere, lol.

Just asked a girl that works for us... said it's either Berria or Verria depending on what part of Mexico you're from.
Bing'd it... came up with all kinds of smut... not sure she was right on the spelling, lol.

My buddy is from "the center of the country" so I'm not quite sure what region of Mexico that is, because appparently that affects the recipe. I'd try this if I wasn't the only one eating it. Until my kids grow up and decide they like this I'm going to hafta mooch Birria of my Mexican buddy... oh darn, lol.
And yeah... don't search for the misspelled version... lol... you won't like what you see.

I don't think it's a stew.... it was steamed for a sandwich and smothered in the hottest salsa I've ever had, lol. And for the record, lmao... I had 9 of them (yes I am a complete slob when I'm eating good food, lol) and my ass didn't burn and no nastiness either.
Which got me to thinking about it... I wonder if when you eat spicy food and your ass burns the next morning... is that because the hot part was chemicals and not natural??? I mean this stuff was HOT and like I said it didn't burn the slightest bit the next day, lol.
