How do I remove the stock shift knob / release button on a 78Z? Thanks

Pull up on the center button.

Inside the outer knob will be a small external retaining clip that once removed, will allow you to slide the outer knob up over the shaft.

Yes! With a little modification or fabrication, you could use install an aftermarket unit. It depends on what part you are considering.
