Does a 383 Stroker require more oil than a normal 350? I am ordering a 383 and need to know what size oil pan I need for the short block.

A 383 requires the same amount of oil as anyother small block but, having a higher then stock oil capicity is better for oil life and oil cooling. If you can get a larger pan (esp. with a windage tray) then I would go for it. I have a 7 quart moroso pan with a windage tray and trap door that came with the pump pickup tube from summit that cost around $180.

Does the 7-Quart oil-pan hold 6 plus one for the oil filter?

Do I have to put in all 7 quarts or just the 5 that chevy recommends out of the factory for '79 Camaros?

You have two ways to look at it. With a 7 quart 'system' you would have a 6 quart capacity in the pan and one in the filter. However, most pans are talking about PAN capacity, not the entire 'system'. More oil will lower oil temps and possibly avoid the dreaded oil starvation if all the oil were pumped to the top end of the motor. BUT (and especially with a stroker) you would be better off getting the 6 quart pan and running 5 quarts in it (or run 6 in a 7qt pan etc). This will lower the oil level down away from the rotating assembly. Whipping up froth in the oil with the stroker assembly smacking the oil level does two things. First you airate the oil,, if your oiling system moves a LOT of oil your pumping oil and air. Oil cools and lubricates the rotating assembly, air doesn't. So you can see the obvious evils there. Second, it takes a lot of horsepower to twist the crank and rods through a pool of oil. Typically the oil gets caught up in the spinning assembly and you all this paricitic weight spinning around with the crank and rods,, which just compounds the horsepower loss.

Best thing to do is get a 7qt pan, snugly fit a diamond screen tray as close to the assembly as possible, (forget the scraper, there is no where for that oil to go and it just builds up against the side of the pan), then run at least 1 quart less than the 'full mark' on the stock dipstick,, but NO LESS than 4.5 to 5qt in the PAN.
