I've got my 355 on a stand right now in the garage and decided I should replace my oil pan in the future, and someone one the boards suggested the Summit brand 7qt baffled pan. It's not overkill, is it?

(Summit part number SUM-G3502.)

If the pump I have is regular volume, is that sufficient for street application? (I don't need to buy a high volume?) I know I'm gonna need the matching pickup though.

The pan would not be overkill on the street but there are a couple things that need addressed. You will need an extended pickup for you pump. On this kick out type pan there is usually a pan vs header vs oil filter issue. You will have to ask someone using the same header/pan combination you are. Some people have to loosen a header to change the oil filter. As for the oil pump, a stock pump will work fine as long as it meets the requirements of the engine, the pan has little to do with it. Personally, I don't see a need to use this type of pan on a street/strip setup unless you one of those 10 second sleepers.

Not quite sure what you mean, but SUM-G3500P is a plane 4 qt. oil pan.

I would go with the SUM-G3502 pan and SUM-G3502P pickup

I'm all for oil controll on street, weekend or full race engines. Oil controll can get back the HP that is lost to windage, plus keep your engine alive longer. To me there is no such thing as over kill on oil controll.

Heck for my daily driver I have the 7 qt kicked out pan, rear main baffle, and screen type windage tray.

Yeah I know, I was just checking on some stock type in case I decide not to go with the 7qt one, since there seems to be some conflicting thoughts:

So I guess I'll just keep reading your opinions.

BTW: I am going to be using Flowtech full-length headers.
