My question is: do I need to warm up my engine before checking and or adjusting my valve lash on a hydraulic flat tappet cam? I have read both cold and warm are O.K. due to the hydraulic compensation that exists with non-solid lifters.

A quick response / comments would be appreciated, as I have some time this evening to do the job.

No, once you get it to idle down, it should be fine to set the plunger depth.

I'm assuming you mean once the cam has been broken in and the car has a few miles on it, then it is O.K. to do them either warm or cold??
I originally set the valve lash on the engine stand during the motor build. Once in the car, I fired her up and did the cam break-in. Since then I have put probably 30 miles on it and have had it running in the garage to set timing, carb, etc.
