How do I determine my 1974 350 stock Camaro's coolant capacity in gallons?
Is it greater or less than 6 gal?

Go to you local Public Library and see if they don't have a bunch of Motor Manuals in their Automotive Section.

Motor, Mitchell, Chiltons, etc....

My Haynes manual states:

1974 350 CID: 15.5 quart without AC, 16.5 quart with AC.

Most are usually around 4 gallons for a sbc.

Buy two of the big 4L jugs of A/F and mix it 50/50... you'll have enough. I have a big Griffin rad with my 350, and that covers it. And this rad is quite a bit bigger than a factory rad.

I needed to know to add the right amt of sodium silicate to my coolant system.
