I'm currently have everything stripped from my camaro except pretty much the dash and the wires that went to the engine compartment/lights. I'm really hesitant to remove the dash and the wires because I'm afraid that I won't be able to hook them back up correctly. I don't know why but I can't read wiring diagrams to save my life and wiring has never been good to me. What did you guys do when you removed the wires? I've labeled almost everything with tape in the engine compartment. I just want to do this right and as easy as possible. Also, any easy tips for removing the dash/things that I should watch out for. Thanks.

I was in the same shoes last year. I was afraid to take out the rest of my dash and wiring. I am have now just began rewiring my entire car after months of gazing at my haynes manual.
Get a camera and take pics as you remove the wiring and dash pieces. Buy zip lock bags and label them with the parts you put in there.
As for the wiring, It is not as hard as you think. Disconnect the gauge cluster and all other switches and label the wires. Next take out the bolts holding the bulkhead connector next to the fuse panel followed by the fuse panel itself. Also don't forget to disconnect the bulkhead connector that holds the engine bay wires and plugs into the fuse panel.
Wiring diagrams can seem comfusing at first but ignore all the 'lines' and focus on a single circuit at a time.I found it easier to read the 72+ diagrams in my haynes than the 70-71 diagrams. The latter seem less complicated but there is alot of info omitted. each circuit is identified by a number.
The concept is for every circuit (identified by a number), you have a power side and a ground side. In between are switches, fuses, loads or other componenets.
Take for example the circuit for the headlight high beams on a 72. ( Haynes manual pg 260)
you already know that the circuit involves the headlight, dimmer switch and the light switch.
This circuit is # 11. start at the headlight, this circuit has a light green wire (LT GRN) .....follow that wire to the bulkhead connector....then to the fuse panel (Pg 262). There is a slot marked #11 to identify the wires involved in this circuit.At the fuse panel, there are two wires exiting.....One goes to the dimmer switch and the other to the light switch.
That is the power side of the circuit. The ground side of this circuit is labeled 151 and connects the headlight to the rad support.

Something else to keep in mind, when you start to re-wire you might find a few things that don't connect anywhere and that is ok. Most of the under dash harr are one size fits all so if power windows or door locks were an option for your model year and your car did not come with those options there will be plugs for those options but nowhere for it to go! The key is take a ton of pictures and mark everthing clearly.
