My dad has a brand new built full roller 355 which will require taller valve covers. Now will my original AC brackets fit going up and over the valve cover on the drivers side of the motor????

I doubt the original brackets for the A6 compressor will fit over a tall set of covers. You may have to go to a different assy drive kit that mounts the compressor out a bit farther.

The bracket over the valve cover is not a MUST, leave it off and go cruising.

I am using a set of cast aluminum covers which are only a fraction of an inch taller than factory... The factory bracket fits with just enough room to floss between the cover and bracket.
"Tall" covers aren't going to fit.

You can probably leave the upper bracket off if you have the one on the lower portion of the compressor connected to the header/manifold bolts.
