except instead of some dried italians sausage, she uses chopped grouse, venison or moose. She asks for wild meat, I provide.

What are you trying to stuff them with?

My mom always used breadcrumbs,herbs,and stuff then basted them...is that something you're interested in,italian-style?

My grandpa used toast cut into croutons and then added carrots, celery, raisins, onion, pepper etc...after saute-ing the veggiesin olive oil.

Steam the 'chokes before stuffing and then bake after stuffing. I haven't had them in years but I used to love 'em.

Go freestyle...I know you can cook, breh.

I was thinkin par-boil and bake in the oven. I've never attempted this before.
MCJ told me quite awhile back how to do this and I forgot :screwup: .

yes,all that and grated parmesan.
cut off the stems,give them a good,firm "twist" to open 'em up good,stuff that mix (don't forget the evoo) and shove it into the leaf cavities.
stand up about 3-4 (depending on size) in a medium stockpot to help them hold each other up.
carefully pour chicken stock (1-2 bay leaves too) about 1/2 way up and simmer for 30-40 mins,basting constantly....mmm.:crazy:

Yer welcome mate...a turkey baster works great to keep them moistured up.:p
