I drained all the grease off ;)
I normally wrap it in tinfoil with pineapple. Tried the bacon this time. It was good. Only reason I did bacon was all I have seen on here lately.

I don't think I've ever seen a pork? tenderloin that big!

How about a little direction on how this was made because it looks delicious.

We bought a whole tenderloin. I cut it in thirds. This was one third of it.
Butterfly the loin so its about 3/4"-1" thick.
Olive oil in pan and just sear both sides of the loin
Then sautee peppers, onions, shrooms, black olives
With loin layed out flat cover it with your choice of cheese
Then put a layer of fresh spinach leaves
Then cover with your peppers mixture.
Roll it up and cover with bacon
Oven to 400
cook till internal temp is around 155
let sit for 10-15 minutes
