I dis-assembled my 1980 Z28 engine 9 years ago and do not remember what all the bolts look like. If anyone is currently breaking one down and labling all the bolts I could use some pictorial help on what goes where. I was should have not thrown them all in one container but I was 20 and thought I would have the engine done by now. Especially looking for all bolts for the intake and brackets associated with it, I have cruise control as well if that makes a difference.

Oh, lord. You're in deep weeds if you're talking about all the accessory bracket bolts in addition to the internal engine bolts. There are studs, bolts of different lengths, etc.
Anything that bolts down the intake manifold is going to be 3/8-16 thread, ditto the exhaust manifolds. Most internal bolts are 7/16-14 (head bolts, mains, oil pump bolt).
Better place to start the discussion is what bolts you're unsure of. Mostly the external/accessory bracket stuff (which somebody could post up pics of) or internal stuff (which many guys on this board know from memory)?

I will be putting the engine together in the next week or so. That will eliminate a lot of the bolts that I know where they go. I will get pics whan I am at a stopping point. I can get most of the engine to completed just those brackets are the main thing.

I need to know what the cam gear and thermostat bolts look like and size. I found my oil pan and timing cover bolts because of the amount of them.

Cam gear is 3/8-16, standard full size 6 point heads, about an inch long, and there's 3 of them.
Thermostat housing bolts probably look about identical to that, but only 2 of them, obviously. Not sure if one of them is a double sided stud to take a ground connection or accessory bracket on an original engine, though. That's where a picture of a stock engine bay would help.
