I went to trader joe's yesterday and saw some goodies.. I bought the Red Curry Sauce (relabeled trader joe's) and their "hodgepodge" eight veggies (frozen relabeled trader joe's) and i picked up fresh boneless non marinated chicken.
Other additons:
half a LARGE white onion (cup and a half maybe?) medium sized chopped
teaspoon chopped garlic
small glug olive oil
fresh cracked pepper
dash of salt
package slices washed regular mushrooms
Curry Row by unique accents (it's slightly sweeter of a curry.. indian based, and works best imho adding to other currys or for the onion/garlic/meat sauteing)
Red Curry Paste and light coconut milk (I wanted more sauce leftover to use again and it spicier so i mixed up my own extra sauce and mixed in 1/3 leftover of the red curry sauce bottle in it with curry row.. probably about 2 teaspoons or curry row)
1)take out wok and rinse with water, pat dry with paper towel.
2)Thaw meat/chicken and i "filet"-ed it thinner, a big boneless breast into 3, thinner one 2 or just the breast. I then cut thing strips and cut them in half. (this was a new cutting style and i loved it!.. mixes in better with the veggies)
3)heat work (medium ish.. 4 on my new gas stovetop) and when hot, put in half of a large onion, medium to large chopped and then garlic. Add glug olive oil, salt, pepper. I cooked this while i chopped my meat.. otherwise wait 5 or so minutes just until they soften a touch and add meat.
4) Cook this mixture on 4-5 mins and add about a tablespoon of curry powder(any works) and let meat cook. WHILE this is cooking, cook carrots, broccoli, or any "hard" vegetables in mircowave with a little water on the bottom, covered for 2-3 minutes or until midway cooked or so. (I put whole frozen bag with a little water in for 2 minutes)
5)When meat is thoroughly cooked, add in vegetables! I then mixed it all together and then added about half the bottle of red curry sauce. Toss gently and move heat to 5.5 ish. (I covered at this point because the sauce is thick and so not all the veggies are sitting in it. (flip and stir occasionally.)
6) while the entire contents are cooking in the curry sauce I made my own curry sauce with the coconut milk, paste, row. You heat the coconut milk to simmering and whisk in the paste and curry powder until you like the taste. **Warning: most curry "pastes" are stronger than powders, and you can't really get them milk. Be not afraid to just buy powder. I find the paste takes more to get to the right flavor and gets hot fast.
7) I them added a little more red sauce to the wok and poured remaining sauce into my new curry mixture that is simmering.
8) I added my own curry mix (not that much) and then put the remainder in a jar. TOSS and eat!
you can make rice to go with this (i didn;t feel like it.. loaded with veggies! yum) but DON'T do instant rice.
I recommend any brand of medium grain rice, or jasmise of basmati rice. You can even throw a little curry row in rice (remember the curry row is generally sweeter not rougher and spicier like regular thai curry powder style)
I reseasoned my wok after this btw.
